Veggie Chopped Salad

I made this yummy Veggie Chopped Salad for my 365 easy recipes challenge. I know this will come as a big shocker to you but I altered the recipe a wee bit.

Some times I prefer my veggies uncooked, especially broccoli and cauliflower. Oh, don’t get me wrong, I often steam those two together, with a few carrots, however, I do like them in a salad. That’s why I was drawn to this recipe.

Veggie Chopped Salad

3 cups finely chopped fresh broccoli

3 cups finely chopped cauliflower

3 cups finely chopped celery

2 cups frozen peas, thawed

6 bacon strips, cooked and crumbled

1 1/3 cups mayonnaise

1/4 cup sugar

2 Tbls. grated Parmesan cheese

1 Tbls. cider vinegar

1/4 tsp. salt

3/4 cup salted peanuts

In a large bowl, combine the first five ingredients. in a small bowl, mix mayonnaise, sugar, cheese, vinegar and salt until blended. Add to salad and toss to coat. Stir in peanuts just before serving. Refrigerate leftovers.

Here are my alterations:

I omitted the celery. Did I ever tell you I detest celery? I don’t actually detest it. I just don’t like it. I also never add salt to anything. And…I didn’t put bacon in the mix. Don’t get me wrong, I do enjoy bacon, it’s just that I decided to go a little more healthy since I was serving it with Mini Party Burgers, which made for a good combination.
