Chicken & Wild Rice Strudels

Oh, the things I make during my 365 easy recipe challenge. I’m not sure this recipe, Chicken & Wild Rice Strudels,  could be totally classified as easy, however, if I can do it then anyone can!

The thing about this 365 easy recipe kick I am on is I like to cook. Finding and cooking new recipes if fun for me and the family enjoys the variety (mostly). Since the peeps around here like to eat, I might as well cook new recipes and share them with you! I’m all about easy, and these recipes are, for the most part. The hardest part of the whole deal is taking photos while I am cooking, and after, and then writing a post. Plus the things you do that help a post get noticed. All of this takes time. Not really more time than I thought, because I know how much time blogging takes, just more time than I have time for. 🙂 But for now, we’ll keep on going with 365 easy recipes.

Chicken & Wild Rice Strudels

1 pkg (8.8 0z.) ready-to-serve long grain and wild rice

1 1/2 cups coarsely chopped rotisserie chicken

1/2 cup shredded Swiss cheese

1/2 tspl Italian seasoning

1/4 tsp. sale

1/4 tsp. pepper

12 sheets phyllo dough (14x9in. size)

6 Tbsp. butter, melted

1. Preheat oven to 400º. Place the first six ingredients in a large bowl; toss gently to combine.

2. Place one sheet of phyllo dough on a work surface; brush lightly with melted butter. Layer with five additional sheets, brushing each layer. (Keeping remaining phyllo covered with plastic wrap and a damp towel to prevent it from drying out.)

3. Spoon half of the rice mixture down the center of the phyllo dought to within 1 in. of ends. Fold up short sides to enclose filling. Roll up tightly, starting with a long side.

4. Transfer to a parchment paper-lined 15x10x1-in. baking pan, seam side down. Brush with additional butter. Repeat with remaining ingredients to make second strudel. Bake strudels 20-25 minutes or until golden brown and heated through.

This recipe has a lot of butter. I like butter. I think Julia Childs was right, you can never have too much butter. Julia Childs lived in a different era. The medical powers that be would beg to differ, I do believe.
